Recipe 1: Steves tasty Rice Taste-4/5. Difficulty-1/5 Mess-1/5. Healthy-3/5
Time :15minutes including prep time. Cost: £3 for 3 large portions, so sweet FA!
Ingredients:
400g chopped tinned tomatoes
75g chorizo (Aldi 225g £1.49, so 50p worth)
1/2 yellow pepper
1/2 Red pepper
1/2 Red/brown onion
Lrg handful of spinach (ugg ugg ugg!)
1 Aldi spicy microwave 90 sec rice (or any other brand)
1 chicken stock cube
Dried Mixed Herbs
Salt and Pepper to taste (more pepper than salt as stock cubes full of sodium!!)
Method
1. Dice onions, red and yellow peppers and chop chorizo into small chunks and add to oil to pan on moderate to high heat. Once hot add all the above and fry for 3-4 minutes, don't let anything stick!
2.Next Add chopped tinned tomatoes and stock cubes plus good sprinkle dried mixed herbs, and continue to cook on moderate to high heat. Start tasting once stock dissolved and start to add good sprinkle of pepper and salt (only if needed). Cook for total 4 mins
3. Add Large handful of spinach and fold into sauce, continue to tase and add more salt and pepper if needed.Cook for further 2 mins till spinach wilts
4.Whilst this is cooking put rice on in microwave once the rice is heated (90secs, fucking easy!) add into sauce and stir well and you are done!
This is one of my favourite go to meals not only does it serve 3 large appetites (I eat like a horse) but it is so simple to make, there is no mess or fuss, and because it is cooked in one pan, there's hardly any cleaning up after. Plus its really fucking tasty and relatively healthy, as its packed full of veg, the only bad things in it are salt mainly from stock cube and the chorizo is high calorie. If you want to be even healthier you can easily switch out chorizo, add garlic instead and use beans( if you are veggie with veg stock) or use chicken which is lean source of protein. I regularly make this on a night and use leftovers for food at lunch the next day at work, or to eat after the gym!. Let me know your thoughts! Much love &enjoy!
